Sigh. OS X Mountain Lion is so good in so many ways, and yet loses. One gain was the return of "Save As…".
To access this in a menu you hold down the option key and mouse over the menu. Under File, Save As… magically reappears.
But the leyboard shortcut is NOT Command+Shift+S. Instead it is by default Command+Shift+Option+S. I went to keyboard shortcuts under settings, then added "Save As…" (has to have the proper ellipsis…), with the shortcut Command+Shift+S.
Better. Much better. For example, iA Writer by default saves files with an ".md" extension – I prefer ".txt" or for some files I need ".cfg".
Yes, there is always VIM. But not necessarily on the iPad or iPhone.
